Day to day the cooking is run by Icíar Pérez, a chef from El Hierro trained by the brothers. The dishes step deliberately away from tradition towards international flavours and textures, with a clear preference for the sea, and the restaurant holds a Michelin star.

Some plates are built on canvases by Néstor, the Gran Canaria painter, turned into food. Two tasting menus are served, and the cellar lists close to 300 wines from the Canaries, the rest of Spain and abroad, chosen by the sommelier.
