The southern resorts hold most of the island's beds, and decades of visitors from across northern Europe have shaped what they eat. The result is a broad international trade along the coast from San Agustín to Meloneras: Indian, Chinese, Thai, Japanese, Mexican and northern European kitchens within a short walk of each other, with more at Puerto Rico and Puerto de Mogán.
Las Palmas has its own version, smaller and aimed at the city, with Latin American cooking prominent among it. Quality in the resorts covers the full range. The places set back from the busiest fronts, and those with a short, specific menu rather than every cuisine on one card, are usually where the cooking is taken seriously. Menus come in several languages, and most kitchens serve from lunch through to the evening.
